Easy Cheese Muffins




This was my first time making savory muffins, and they were really easy and tasty! I was nervous mixing so much cheese together with everything, but it ended up being good! I love the slightly toasted cheese along the sides and on top of the muffins, and I definitely recommend eating these warm! I'd try adding spinach, mushrooms, jalapenos, etc.

Cheese Muffins - Adapted from Pioneer Woman (Fig's Cheese Muffins)
Makes 12 (You can double the recipe and make 24 like I did)

1 1/2 cups flour
1 1/2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
3 cups shredded colby jack cheese - I used a combination of colby jack and cheddar because I doubled the recipe and forgot to get 6 cups of colby jack
1 cup milk
1 egg
1/4 cup (1/2 stick) melted butter (I used unsalted, but Pioneer Woman used salted)
Optional: Spinach, onions, mushrooms, jalapenos...

(1) Whisk together dry ingredients
(2) Stir in cheese
(3) In a separate bowl, whisk egg, milk, & butter together
(4) Pour milk mixture into dry ingredients & stir to combine
(5) Bake in greased muffin tins at 375 degrees for 20-25 minutes (Took my 24 muffins about 20 min)

These look really tasty! I bet they'd be good with bacon too....
